An earlier article provides some basic info on adding other modules to the OS X Dictionary.app.
This site has several of these, including translation dictionaries for French/English, German/English, Spanish/English, and Latin/English.
Others I have seen are Italian, Norwegian, and Romanian.

I have downloaded some of these dictionaries and put them in the /librares/dictionaries folder of my Snow Leopard Mac Book - but the dictionary.app just won't recognise them.
i tried with latin/eng, eng/latin and also with spa/eng, eng/spa. all four work for me on 10.6.8 "/Library/Dictionaries".
you need to quit and reopen Dictionary.app to see them.
